Chicken Piccata is a simple delicious recipe. I like making it because it’s kind of fancy.

Ingredients

  • 2 chicken breasts (our chicken breast was huge, so we only used one).
  • 1 cup flour
  • t tsp table salt
  • 2 tbls Canola oil
  • 1 cup chicken broth or stock
  • 1 tbls capers
  • 1 lemon
  • Parsley for looks

Instructions

  • Pound out chicken to an even thickness, this will help it cook evenly.
  • Mix the flour and salt together on a plate.
  • Lightly bread the chicken. Save the flour for later.
  • Heat oil in a pan on a medium heat.
  • When the oil is hot, cook the chicken for about 3 minutes on each side. The time will vary depending on how thick you pounded your chicken.
  • When the chicken is done, remove it to a plate.
  • Add 2 table spoons of the breading flour to the oil in the pan.
  • Mix together to form a roux. Cook for about 3 minute to cook the flour taste out and the roux turns light brown.
  • Add the chicken broth a third at a time, stirring between additions to make a light gravy. If your gravy is too thick add a little water.
  • Add capers to the gravy and mix.
  • Add chicken in with the gravy and simmer on low heat for about 5 minutes.
  • While chicken is simmering, slice up a lemon and break up some parsley.
  • When the chicken is done, place on a plate and pour some gravy on over it. Make sure to get some capers. The lemon is for squeezing on the chicken for a nice kick to the flavor. The parsley is mostly a garnish.

Trying

When I was done making the chicken two of my friends came over and tried it and they loved it. There were so many different flavors going on at once.
