
Chicken Piccata is a simple delicious recipe. I like making it because it’s kind of fancy.

Ingredients
- 2 chicken breasts (our chicken breast was huge, so we only used one).
- 1 cup flour
- t tsp table salt
- 2 tbls Canola oil
- 1 cup chicken broth or stock
- 1 tbls capers
- 1 lemon
- Parsley for looks
Instructions
- Pound out chicken to an even thickness, this will help it cook evenly.
- Mix the flour and salt together on a plate.
- Lightly bread the chicken. Save the flour for later.
- Heat oil in a pan on a medium heat.
- When the oil is hot, cook the chicken for about 3 minutes on each side. The time will vary depending on how thick you pounded your chicken.
- When the chicken is done, remove it to a plate.
- Add 2 table spoons of the breading flour to the oil in the pan.
- Mix together to form a roux. Cook for about 3 minute to cook the flour taste out and the roux turns light brown.
- Add the chicken broth a third at a time, stirring between additions to make a light gravy. If your gravy is too thick add a little water.
- Add capers to the gravy and mix.
- Add chicken in with the gravy and simmer on low heat for about 5 minutes.
- While chicken is simmering, slice up a lemon and break up some parsley.
- When the chicken is done, place on a plate and pour some gravy on over it. Make sure to get some capers. The lemon is for squeezing on the chicken for a nice kick to the flavor. The parsley is mostly a garnish.

When I was done making the chicken two of my friends came over and tried it and they loved it. There were so many different flavors going on at once.
